Roasted Peach and Ginger Chia Pudding

01Preheat oven to 400F. Toss the peach halves in coconut oil and sugar and roast 35 minutes until tender; cool and chop. 2. Blend the almond milk, cashews, dates, vanilla, ginger, and cinnamon until smooth. 3. Pour over the chia seeds, stirring every five minutes a few times. 4. Let set several hours or overnight. 5. Stir in the peaches and serve.
