    Preheat oven to 350F. 2. Blend the pumpkin puree and peeled plantain until smooth. 3. Add the eggs, spices, vanilla, baking soda, and baking powder and blend. 4. Add the pumpkin seed flour, then the coconut oil, and blend. 5. Pour into a greased loaf pan and bake 40-50 minutes.
