01Place a rack in the upper third of the oven and preheat the oven to 400°F. 2. Arrange the bread in a single layer on a parchment-lined baking sheet. 3. Brush each side of bread with ½ teaspoon olive oil and bake for 5 minutes. 4. While the bread is in the oven, heat a skillet over medium heat with the remaining olive oil (2 tablespoons). 5. Start cooking the tomatoes (total 10-12 minutes). 6. Flip bread and bake for another 5 minutes. Remove bread and set aside. 7. Continue stirring tomatoes in the skillet until juice begins to caramelize. 8. Then add the garlic, vinegar, and honey. Cook for 30-45 seconds before adding the white beans. 9. Continue cooking until the beans are warmed (about 2 minutes). 10. Optional: mash the beans within the skillet before arranging the bean mixture on top of the 4 slices of bread. 11. Top with vegan parmesan and thyme. 12. Enjoy!
