- 2 tsp โ ginger
- 6 oz โ dry soba noodles
- 1 cup โ matchstick-cut carrots
- 1 cup โ matchstick-cut red or yellow bell pepper
- 0.5 whole โ a bunch Japanese chives or regular chives
