Pistachio-Encrusted Wild-Caught Halibut

Preheat oven to 400°F (200°C).
Ingredients (for 2 servings)
1 whole โ • 2 wild-caught halibut fillets (5 oz each)
1 whole โ • ½ cup shelled pistachios (chopped)
1 whole โ • 2 tbsp ground flaxseed
1 whole โ • 1 tbsp Dijon mustard
1 whole โ • 1 tbsp olive oil
1 whole โ • 1 tsp lemon zest
1 whole โ • Salt and pepper to taste
1 whole โ • 1 cup steamed broccoli (side)
1 whole โ • ½ cup cooked quinoa (side)

1 whole โ Preheat oven to 400°F (200°C).
1 whole โ Mix pistachios, flaxseed, lemon zest, salt, and pepper in a bowl.
1 whole โ Brush halibut with Dijon mustard and press into pistachio mixture.
1 whole โ Place on a parchment-lined baking sheet and drizzle with olive oil.
1 whole โ Bake for 12–15 minutes or until fish flakes easily.
1 whole โ Serve with steamed broccoli and quinoa.
