Ingredients (for 5 servings)
- 2 Tbsp โ olive oil
- 1 whole โ large onion, diced
- 3 cloves โ of garlic, minced
- 6 cups โ broccoli florets
- 2 cups โ carrots, shredded
- 4 cups โ vegetable broth, low sodium
- 3 cups โ plant milk, unsweetened
- 1 cup โ raw cashews, soaked and drained
- 1 whole โ ½ cups vegan cheddar cheese, shredded
- 2 Tbsp โ nutritional yeast
- 2 Tbsp โ all-purpose flour
- 1 tsp โ paprika
- 1 whole โ ½ tsp turmeric
- 1 whole โ Salt and pepper, to taste
