- 4 cups โ vegetable broth, low sodium
- 2 cloves โ garlic, minced
- 1 tsp โ smoked paprika
- 1 whole โ ¼ tsp salt
- 1 Tbsp โ olive oil
- 1 whole โ (15 oz) can black beans, low-sodium, drained and rinsed
- 1 whole โ ½ cup corn kernels
- 1 whole โ ½ cup nutritional yeast
- 1 whole โ ¼ cup fresh cilantro, chopped
- 1 whole โ Black pepper, to taste
- 1 whole โ ½ Tbsp olive oil, for pan-searing
- 1 whole โ avocado, sliced
- 2 cups โ pico de gallo
